tips and using of spice grinder
If you are ever tempted to use ground spices bought in a bottle or plastic pack, just try this test. Lightly toast in a dry pan some whcie spice seeds for about a minutes, or until they start to smell fragrant. Transfer them to a spice grinder and process to a fine powder.
Reserve one grinder for spices, and a second grinder for coffee. Spices and coffee both have big profiles, and you don't want to mingel their pack. Using a spice grinder or a clean coffee grinder, grind the cumin, using an on-off pulse so that there is both powder and broken pieces. Transfer to a small bowl. Grind the coriander to a powder and add to the cumin. Add the remaining spices and mix well.
