Food Mill
A food mill is a piece of equipment designed to remove the seeds, skins and tough fibers from raw or cooked fruits and vegetables. It is especially useful when making butters, smooth sauces, applesauce or seedless jams. Food is placed into the mill, and the handle is turned to force the food through a metal disc perforated with small holes. Discs with different-size holes may be used, depending on the type of food to be milled. the size of the seeds to be removed and the desired consistency of the finished product. The seeds and skins are forced to one side, while the pulp passed through the disc. Using a food mill is faster and easier than trying to remove the seeds and skins from fruit by forcing it through a fine sieve.
The Foley food mill was the first food mill to be made readily available to the average consumer, and as a result, is the most commonly known brand. When purchasing a food mill, make sure that it is made of stainless steel. It will be sturdier, work better and last longer than the cheaper ones that are tin-plated or made from plastic. The tin-plated food mills tend to rust after only a few uses, and the plastic ones break easily.
Sieve
Fine-meshed sieves are useful for separating the juice from the fruit pulp when making jellies, syrups and vinegars. A sieve may be used in place of a food mill to separate the seeds and skins from the fruit pulp when making sauces and batters or to puree applesauce. Curds and many juices are also strained through a sieve. The mesh should be very fine to prevent small seeds and bits of fruit from passing through the sieve.
Metal sieves, other than those made from stainless steel, tend to rust quickly and can impart a metallic flavor to the food. Sturdy plastic sieves with a stainless steel mesh are an excellent choice because they clean up easily and will last a long time. Use a stiff brush to remove small food particles that may become trapped in the mesh, then rinse the sieve under running water until all signs of food and soap are completely gone.
